Spinach Casserole |

Filling: |

1 package chopped spinach (cooked & drained) |
1/4 cup grated Parmesan cheese |
3 Tbsp. butter |
1/3 cup Pepperidge Farm fine stuffing |
1 beaten egg |
Salt & pepper to taste |
| Sliced tomatoes | |
Grease a casserole pan. Line the bottom with tomatoes. Melt the butter, add other filling ingredients, pour over tomatoes. Top with more cheese and cover. Bake at 350° for 30 minutes. This is great even if you don’t like spinach. Also try roasted peppers on the bottom instead of tomatoes. |
