Layered Holiday Casserole

3 tablespoons olive oil
2 ½ pounds lean ground beef
1 zucchini, grated
1 med sweet onion, grated
2 carrots, peeled and grated
3 cloves of garlic, minced
1-2 tablespoons chili powder
2 teaspoons ground cumin
Salt and pepper
1 cup beef stock
6- 8”flour tortillas
3 cups shredded Monterey Jack cheese

Topping
4 chopped scallions
2 romaine hearts, chopped
3 plum tomatoes, chopped

Preheat oven to 400°
Grease a 9X13 pan.
Heat a large skillet over med-high heat. Add the oil and then the meat. Brown the meat for about 5 minutes. Add the veggies, onion and garlic. Season with the spices and cook for 8 minutes more. Stir in beef broth. Lay 3 over lapping tortillas in the bottom of the pan. Top with 1/3 of the meat mixture and 1/3 of the cheese. Repeat the layering and then bake uncovered for 10-15 minutes. Then cheese should be brown and bubbling. Top with scallions, tomatoes and lettuce and serve.

Serves 6-8.
