Caramelized Onion Tarts
1-2 large sweet onions chopped
1/3 cup packed light brown sugar
2 tablespoons canola oil
½ cup water
2 large eggs, beaten
1 cup ½ and ½
1 cup shredded Swiss cheese 4 oz.
Salt and pepper
1 (room Temp) pkg, 2 crusts refrigerated pie crust.
Roll crusts to make thinner. Cut 2.5” circles and then re-roll the scraps. Pat into mini muffin tins forming to the bottom and up the sides.
Cook and stir onions and brown sugar in oil for 3 minutes.
Add water and cook and stir
until onions are brown and tender. Cool slightly.
Stir eggs, milk cheese salt and pepper. Stir in onion mixture. Set aside.
Spoon onion mixture (2 small tablespoons) into tart shells.
Bake at 375° for 20 minutes or until knife comes out clean from the center of the tart. Cool 5 min. in pan.
Serve warm or at room temp. These can be done the day before and refrigerated.
